Recipe Round-Up

This past week has been pretty busy for us...getting last minute things locked down and taken care of before our Spring Break trip. We don't want to have food spoil in the fridge while we're gone so it's been minimal cooking for me. I'm not complaining! 

These are just a few of our favorites from this past week. 

Tuna with Corn
{we ate this on a tostada with sour cream and topped it off with salsa-its a quick, yummy meal. 4 cans of tuna, 2 eggs, 1 can of corn, pepper to taste}

The Balsamic Chicken, I think, was our favorite. It is so full of flavor and the veggies compliment the chicken just right. M even tried asparagus, which he ended up loving! YAY!! 

All the meals were super easy to prep and get together. I think what took me the longest was chopping the veggies. If you decide to try these let me know what you think in the comments!
